Product features
The agricultural holdings of the inland of Genova (and Stura Valley in particular) are characterized by a traditional agriculture: they supply milk to the valleys of Genova. A small milk depot was created in Masone at the beginning of the 20th century. The milk is mainly obtained from Bruna cow breed, as well as from Frisona and Cabannina cow breeds. The fodder enriches the milk with its diversified floristic content, giving the products the fresh aroma of mountain meadows. According to the analytic parameters, it contains a good percentage of fats (3.7%) and proteins (3.3%). In order to promote and enhance this important resource, Valli Stura e Orba Mountain Community - with the collaboration of Beigua Park Authority - has created the gastronomical-cultural itinerary recognized by the Law 268/99 as the itinerary of the local traditional products.
It is included in the Regional Atlas of Traditional Products edited by Regione Liguria, Agriculture and Tourism Department.
Preparation
At the moment, about 150 quintals of milk are supplied every day to Masone cheese factory. In the factory, about 40 quintals of milk are pasteurized and packaged. The remaining part is used to produce a wide range of cheese, like the delicious stracchino, primo sale, misto capra, Turchino, and canestrato, as well as yogurt, ricotta cheese, and butter.
